Eating Albanian


Tarator is cold yogurt soup that my dad loves very much. He enjoys it with only cucumber and garlic, but you can add fresh herbs to it, as well. It’s perfect for those hot summer evenings.


  • 2 cups plain yogurt (you can use fat-free if desired)
  • 1 cucumber, chopped
  • 1 T chopped dill (optional)
  • 1 T olive oil
  • 3 cloves garlic, minced
  • 1 pinch of salt

Combine all of the ingredients and serve immediately.

Some people like to add water to this soup. If you feel that the soup is a bit on the thicker side for your tastes, you can add as much water as you would like to thin it out. I don’t add water. I have found that if you beat the yogurt a bit it will thin out nicely.
