Roasted beets – Panxhar të pjekur
Description
For centuries, beets have been used for not only food, but also as red dye and medicine. It’s so easy to cook beets, and their flavor is a heavenly combination of earthy and sweet. Beets are nutritious and have numerous health benefits. You can use the fresh leaves of the beets, too; they are excellent in soups or stews. One of the easiest ways to cook beets is to first roast them and then use them in a sauté with chives and goat cheese. There are also delicious with other meaty vegetables, and everything cooked with them will turn a lovely pink color.

Prepare the Beets: Wash the beets thoroughly. Place them in an oiled baking pan and cover with aluminum foil, or wrap each beet individually in foil.

Roast: Preheat the oven to 400°F (200°C). Roast the beets for about 1 hour, or until they are tender when pierced with a fork.

Cool and Peel: Allow the beets to cool. Once they are safe to handle, hold them under running water and remove their skins with your hands or a small knife.

Cut: Place the peeled beets on a cutting board and cut them into chunky pieces or rounds, as preferred.

Sauté: In a sauté pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until soft and translucent.

Combine: Add the beet pieces to the pan and cook for 1–3 minutes. Season with salt, pepper, vinegar, and dried herbs. Cook for an additional minute to blend the flavors.

Serve: Remove from heat and allow to cool slightly. Serve warm or at room temperature, optionally accompanied by rice or as a salad topping.
