Description
Kallamoq, also known as buke kallamoqi, is a traditional Albanian cornbread dish made from white cornmeal. It's a staple in Albanian cuisine, often enjoyed on its own or paired with various accompaniments.

1. Preheat your oven to 180°C (350°F).

2. In a large bowl, whisk together the yogurt and baking soda. Let it sit for a few minutes to activate.

3. Add the egg and oil, mix well.

4. Stir in the chopped spinach and crumbled cheese.

5. Gradually add the corn flour and salt, mixing until you get a thick but pourable batter. Add a splash of water if it’s too thick.

6. Grease a baking pan and pour in the mixture, smoothing the top.

7. Bake for about 35–45 minutes, or until the top is golden and a toothpick comes out clean.

8. Let cool slightly before slicing and serving.
