Dr. Feride Rushiti,
Feride Rushiti is one of the pioneering activists of Human Rights in Kosovo. She’s the director of the “Kosovo Center for the Rehabilitation of Torture Survivors’. ( QKRMT )
She has received the U.S Secretary of State’s International Women of Courage Award from US First Lady Melania Trump on 2018.
Dr. Feride Rushiti has selected Krelan for her Albanian culinary experience. Krelan is a traditional Albanian dish suitable as a main course or a delightful accompaniment for afternoon tea. This wholesome recipe allows for flexibility with pantry or fridge ingredients, tailored to personal preferences. In this instance, Feride opts for a delightful combination of spinach and cheese, creating a delicious and easy -to-make dish that any Albanian and non Albanian can make.

Ingredients:

  • 2 cups yogurt
  • 1 cup milk ( or mineral water)
  • 1 cup cheese
  • 1 cup extra virgin olive oil
  • 2 cups corn flour
  • 1 cup all purpose unbleached flour
  • 3 free range extra large eggs
  • 1 pound spinach
  • 1 tsp baking powder
  • 1/2 tsp Mediterranean salt

Directions:

1- Preheat the oven to 400 degrees as you work your magic on the Krelan.
2- Wash, dry and finely cut the spinach into smaller pieces for optimal mixing with other ingredients.
3- Combine spinach, 1/3 of the oil and salt in a bowl, thoroughly mixing together. Set aside.
4- In a separate large bowl, lightly beat the eggs.
5- Combine all wet ingredients together into the egg bowl, ensuring a well – mixed blend.
6- Gradually add remains dry ingredients, stirring until a cohesive mixture forms.
7- Gently fold the spinach mixture into the large bowl, ensuring a delicate mix.
8- Warm the baking pan in the oven for a minute to prevent sticking.
9- When, the baking pan gets hot, evenly press the mixture into the pan and bake for 20 – 25 minutes, adjusting for oven strength.
10- Optionally, brush a little milk on top after baking to soften the crust.
In an Albanian table, serve Krelan with feta cheese, olives, yogurt, or pickled vegetables, complimenting a whole meal or enjoying it alone during afternoon tea.
