Roasted Whole Chicken

Poultry is widely used across Albania, usually baked and served with vegetables, rice, or pasta.
Rarely is poultry roasted whole, except for holidays like Christmas or New Year’s. This roast chicken recipe is very easy, yet the results are incredible.

Ingredients:

  • One whole chicken
  • ½ t salt
  • ½ t black pepper
  • ½ t garlic powder
  • ½ cup butter

Directions:

  1. Rinse and dry the chicken. Remove all the giblets and tightly tie the legs together if they’re not tied up already.
  2. Place the chicken in a pan and sprinkle the salt, pepper, and garlic powder inside the cavity and all over the outside of the chicken. Rub butter all over the skin and the inside cavity.
  3. If desired, you can place potatoes and carrots around the side of the chicken in the pan. You can also add pieces of celery inside the chicken before cooking.
  4. Roast, uncovered, for 1¼–1½ hours in a 350°F oven. Once it’s done, remove it from the heat, cover it, and let it rest for about 15 minutes before carving. Decorate around if you like.
  5. Serve warm!
